Ingredients

  • 2 persimmons (ripe)
  • 1 3/4 cups all-purpose flour
  • 1/3 cup brown sugar
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1 packet baking powder
  • to taste ground cinnamon
  • lemon zest (grated)

Preparation

  • In a bowl, beat the eggs with the sugar until the mixture becomes frothy. Gradually add the oil while mixing;

    Add the persimmon puree and grated lemon zest and mix with the spatula;

    In a separate bowl, sift the flour with the baking powder, a pinch of salt, and cinnamon. Mix;

    Add the dry ingredients to the wet ingredients and mix vigorously until you obtain a homogeneous mixture;

    Pour the batter into the muffin cases and bake in a static oven at 350°F for 25 minutes;

    Let cool and sprinkle with powdered sugar. Serve.

For a richer muffin, you can add chocolate chips or alternatively walnuts to the batter.

If there are leftovers, store them in a well-sealed container for 2/3 days at room temperature.
