Ingredients
- 2.2 lbs beef topside (in one piece)
- 3.5 oz pork pancetta
- 5.6 oz butter
- 2 glasses red wine
- 2 glasses water
- 1 onion (studded with 2 cloves)
- 1 carrot
- 1 stalk celery
- 1 onion
- 1 leaf bay
- 2 tablespoons tomato sauce
- to taste salt
- to taste pepper
- 1 bouillon cube

Preparation
First, you need to chop celery, carrot, and onion;
In the uncovered pot, sear the meat studded with pancetta in melted butter, add salt and pepper;
Sprinkle with wine and let it evaporate;
Add chopped celery, carrot, and onion, bay leaf, and the onion studded with cloves and let them blend;
Add tomato sauce and then the water with dissolved bouillon cube;
Stir;
Close the pot, at the start of the whistle lower the flame and count 50 minutes of cooking;
Open the pot and if the sauce is too thick, dilute it or vice versa, thicken until the desired consistency;
Serve the braised beef in slices with the cooking sauce.
The braised beef can be stored in the refrigerator for a couple of days in a well-sealed container
