Ingredients
- 1 cotechino
- to taste water

- 1 Pressure Cooker lagostina
Preparation
First, you need to prick the meat with a fork and wrap the cotechino in 2 sheets of aluminum foil, sealing them like a candy;
Place the cotechino at the bottom of the pot on a steamer basket and pour water just to cover the bottom of the cotechino;
Close the lid and cook on high heat;
Once the pressure cooker whistles, lower the heat and cook for half an hour;
Turn off the heat and wait a few minutes before opening the lid;
Remove the cotechino, open the aluminum foil, and let it evaporate;
Peel the cotechino by making an incision along its length;
Place it on a plate and slice it.
Leftover cotechino can be stored in the fridge for 2/3 days.
