It’s a difficult time for everyone, and it seems we need to aim more and more for savings.

A good cooking method that helps cook food well and saves time and gas consumption (what a blessing!), is definitely the Pressure Cooker.

I use it often and gladly, and it is truly a great help in the kitchen.

Just think that from the valve whistle, I let twenty minutes pass, and it was ready. No need to stir constantly or worry about drying the sauce too much. Really convenient.

For those wondering, the Rabbit with wine cooked in the pressure cooker turned out really good and tender, with a sauce worthy of a perfect score.

Ingredients

  • Half rabbit
  • 1 carrot
  • Half white onion
  • 1 garlic
  • 2 rosemary sprigs
  • 1 cup dry white wine
  • to taste fine salt
  • to taste extra virgin olive oil

Steps

  • To prepare the Pressure Cooker Rabbit, first wash and dry the rabbit pieces;

    In the pressure cooker, pour some oil and slowly sauté garlic and carrot;

    Chop rosemary and onion and add them to the carrots with the garlic;

    Add the rabbit pieces and mix with a wooden spoon. Brown on both sides;

    Deglaze with white wine;

    Add salt, mix, and close with the special lid;

    Count twenty minutes from the whistle;

    Carefully open the pot and release the steam;

    The rabbit is ready!

Once the rabbit is prepared, I recommend eating it hot and storing it in the fridge in a well-sealed container for 1 day.

    You can soak it in water and lemon juice for 30 minutes. Alternatively, you can use vinegar. After half an hour, wash it and dry it with paper towels.

  • How do you clean the pressure cooker?

    Like any other pot, by hand or in the dishwasher. However, I always wash the lid by hand.

  • What if the valve doesn’t whistle?

    Check if the pot is properly closed and the lid is well sealed.
