Pressure Cooker Roast Beef

Roast beef is a second course meat dish that I absolutely love, especially when the meat is tender.

Today’s recipe suggests cooking Roast Beef using a pressure cooker.

What does that mean? It means that instead of the usual 2 hours of slow cooking, it only takes 15 minutes with pressure cooking.

I love to accompany roast beef with delicious oven-baked potatoes, but classic mashed potatoes or any other side dish of choice is also fine.

Ingredients

  • 2.2 lbs roast beef
  • 1 sprig rosemary
  • 1 celery
  • 1 carrot
  • Half onion
  • 2/3 glass dry white wine
  • 3.5 tbsp extra virgin olive oil
  • to taste salt

  • 1 Pressure Cooker lagostina

Preparation

  • First, you need to slowly brown the piece of roast beef on all sides in oil;

    Add chopped celery, carrot, and onion;

    When a crust has formed, pour in the wine and let it evaporate;

    Add hot water to just above the halfway point of the meat piece and salt to taste, add rosemary;

    Close the lid and increase the heat;

    From the start of the whistle, lower the heat and count 10 minutes for cooking. If you prefer less rare roast beef, continue cooking for another 5 minutes;

    Serve in slices with cooking sauce.
