Ingredients for Roast Turkey
- Half 1 kg turkey (already cleaned)
- 2 slices fresh lard
- Half cup dry white wine
- 1 sprig rosemary
- Half cup vegetable broth
- to taste fine salt
- to taste black pepper

Preparation
First, you need to wash and dry the turkey;
Salt and pepper the skin side;
Place the slices of lard on the surface and tie with kitchen string;
Pour a dash of oil into the pressure cooker;
Put the turkey in with a sprig of rosemary;
Brown on all sides and remove any formed fat parts;
Pour the wine and let it evaporate;
Add the broth or hot water (as you prefer);
Close the pot and at the first whistle, lower the flame and cook for 45 minutes
You can store leftover roast turkey in a tightly closed container, in the fridge for up to 3 days.
