Ingredients

  • 1.76 lbs boneless veal rack
  • 1/4 cup extra virgin olive oil
  • 1 tbsp butter
  • 2 cloves garlic
  • to taste rosemary and sage
  • 1 cup dry white wine
  • 1 cup milk
  • to taste salt
  • to taste black pepper

Preparation

  • Brown the meat, remove the garlic cloves and pour in a cup of wine and let it evaporate;

    Then add the milk;

    Close the pot and, once the whistle starts, lower the heat and cook for 40 minutes;

    The sauce should be well diluted. For those who prefer it thick, let it reduce for a few minutes over high heat with the pot uncovered.

You can enrich the base with carrots and celery for a richer flavor.

Serve it with roasted potatoes, mashed potatoes, or sautéed vegetables.

Store in the fridge for up to 3 days.
