Ingredients
- 1.1 lbs purple cabbage
- 1 carrot
- 1 celery stalk
- 1 onion
- 3.5 oz water (hot)
- 2/3 cup walnuts (chopped)
- 3/4 cup pumpkin seeds
- to taste cream cheese
- to taste salt
- to taste pepper
- to taste extra virgin olive oil
Preparation
To prepare the Purple Cabbage Soup with Seeds and Nuts,
first wash the cabbage and remove the tougher outer leaves;
Finely chop the cabbage;
In a pot, heat a drizzle of extra virgin olive oil and slowly cook chopped celery, carrot, and onion;
Add the cabbage, salt, pepper, and water,
Stir and cook slowly for 15 minutes until the cabbage wilts;
Transfer everything to a blender, pour in a drizzle of oil, and blend until creamy;
Pour the soup into a dish and garnish with dollops of cream cheese or robiola, chopped walnuts, and pumpkin seeds;
Finish with a drizzle of olive oil;
The soup is ready!
