Artichoke season is here, which means it’s time to focus on the many recipes that feature them.
Artichokes have numerous health benefits, including fiber, antioxidants, vitamins, and minerals.
And let’s not forget their detoxifying properties, beneficial for digestion and liver health.
In this article, I present a traditional recipe like Roman Artichokes in the Pressure Cooker.
Using a pressure cooker is advantageous both in terms of energy saving and time saving.
In just 12 minutes, you’ll have tender artichokes ready to be tasted.
Depending on their size, the cooking time will obviously vary.

Here are some other recipes you can make with artichokes:
- Difficulty: Very Easy

First, you need to remove the tough leaves from the artichokes, cut the stem leaving 2.5 inches and clean the tough outer part;
Spread the leaves and put in garlic, parsley, and chopped mint;
Place the artichokes in the pot with the stem facing upwards. Add water and oil;
Salt and pepper;
Close the pot;
At the start of the whistle, lower the heat and count 12/14 minutes of cooking;
If the sauce is abundant, continue cooking without the lid to let it “reduce”;
Place the artichokes on a serving dish and drizzle them with their sauce.
They can be stored in the fridge for a couple of days
