How to make bechamel

For the mushrooms, I opt for fresh ones.

Great dish to serve both for lunch and dinner, although I must say I mostly bring it to the table in the evening, accompanied by a good red wine.

Ingredients

for Rustic Pie with Mushrooms and Bechamel

  • 9 oz champignon mushrooms
  • 2 cups bechamel (ready)
  • 5 oz grated Parmesan cheese
  • 1 1/4 cups vegetable broth
  • 1 sheet puff pastry
  • 1 clove garlic
  • 1 chili peppers
  • to taste fine salt
  • to taste extra virgin olive oil

  • 1 Spatula
  • 1 Baking pan 11 inches

Preparation

  • To prepare the Rustic Pie with Mushrooms and Bechamel, first wash and dry the mushrooms and slice them thinly;

    Sauté the garlic and chili pepper in a bit of olive oil in a pan;

    Add the mushrooms and stir. Cook slowly for 5 minutes;

    Prepare a light broth with celery, carrot, onion, and pour it over the mushrooms;

    Cook on low flame for 10 minutes;

    Pour the ready-made bechamel into a large bowl;

    Add 2 ladles of mushroom broth to the bechamel and mix;

    Place the puff pastry in a baking pan and pour the bechamel and mushrooms over it;

    Sprinkle with grated Parmesan cheese;

    Roll up the edges of the puff pastry and bake;

    In a static oven at 350°F for 35 minutes;

    Wait for it to be lukewarm before slicing.

Store in the fridge for up to 2 days
