Ingredients

  • 1 sheet puff pastry (or phyllo dough)
  • 1 lb Butternut squash (peeled)
  • 5 oz feta cheese
  • 1 shallot
  • to taste chopped walnuts
  • 1 sprig rosemary
  • 1 drizzle extra virgin olive oil
  • to taste fine salt
  • to taste pepper

Tools

  • 1 Baking Pan graziano

Preparation

  • Allow to cool slightly, then add crumbled feta and walnuts;

    Place parchment paper in a round baking pan with a diameter of 9.5-10 inches and lay out the puff pastry;

    Pour the filling in the center, leaving a 1-inch border;

    Fold the edges inward;

    Brush the edge with milk and put in a static oven at 350°F for 30/35 minutes;

    Serve warm with a side salad.

Substitute feta with mild gorgonzola for a stronger taste.

Add speck or bacon for a non-vegetarian version.

Vegan version? Try with smoked tofu and pecans.
