Spaghetti with smooth-hound ragù Fish ragù is a valid substitute for meat ragù on hot summer days, when you are looking for delicate and light dishes that aid digestion. Today I propose a recipe featuring the smooth-hound (palombo), a fish caught in the North Sea but also widespread in the Mediterranean. Smooth-hound meat contains no cholesterol, is rich in proteins, calcium and phosphorus. It also has a good percentage of iodine, great for thyroid-related issues. It is extremely lean and digestible, ideal for those following a low-calorie diet, for children or for anyone who simply wants a light and healthy dish. Ingredients for Spaghetti with smooth-hound ragù

  • 12 oz Spaghetti No. 5
  • 4 fillets or steaks of smooth-hound (palombo)
  • 1.5 cups Fresh tomatoes
  • 1 clove Garlic
  • 1 Onion
  • to taste Extra virgin olive oil
  • to taste Salt
  • to taste Pepper
  • 1 glass Dry white wine
  • to taste Capers

Preparation

  • In a pan, heat a drizzle of extra virgin olive oil with one crushed clove of garlic and the chopped half onion;

  • Remove the skin from the steaks and rinse under running water. Pat dry with paper towels and brown on both sides together with the garlic and onion;

  • Deglaze with white wine, let it evaporate and continue cooking over low heat;

  • Wash and chop the cherry tomatoes and add them to the smooth-hound steaks. Season with salt and pepper. Cook until the fish flakes with a fork, about 15–20 minutes;
    Meanwhile, cook the spaghetti and drain them al dente;
    Set aside a portion of the smooth-hound ragù on a plate and toss the spaghetti in the pan with the remaining sauce;

  • Add the salt-packed capers after rinsing them and, if you like, parsley;
    Add the remaining ragù that was set aside and serve hot;
    If desired, you can drizzle extra virgin olive oil on top 🙂
