Ingredients for the Eggplant Strudel
- 1 roll puff pastry (rectangular)
- 250 g eggplants (grilled)
- 100 g cooked ham
- 130 g provola cheese
- to taste water
- to taste grated parmesan cheese

How to make Eggplant Strudel
To prepare the eggplant strudel, first unroll the puff pastry, keeping it on its parchment paper. On one half of the puff pastry, leaving a 3/4 inch (2 cm) border free, arrange the grilled eggplants without overlapping them too much, and season with a pinch of salt and pepper.
Add the slices of cooked ham and provola cheese in an orderly manner.
Make cuts on the free half of the puff pastry. Using the parchment paper, roll it up and seal the edges well.
Brush the surface with a little water and cover it with grated cheese.
Bake in a preheated static oven at 356°F (180°C) for 30 minutes, or until the surface is golden brown.
Cut into pieces and serve while still hot. Enjoy your meal!
Storage
The puff pastry roll with eggplants can be stored for two days at room temperature. I suggest reheating it to make it cheesy again.
