How to make Glass Cookies

  • To prepare the glass effect cookies for Christmas, first prepare the shortcrust pastry: on the blog, you can find various recipes, my favorite and the one I used in this recipe is this one because it holds its shape very well during baking. I prepare it and always keep some in the freezer, just thaw, roll it out, and you’re ready to go.

  • Roll out the pastry to a thickness of 1/8 inch, and using two cookie cutters of the same shape but different sizes, cut out the cookies. First cut the outer edge with the larger cutter and then cut the center with the smaller one.

  • Place the cookies on a baking sheet lined with parchment paper, re-knead the scraps, and start again until the shortcrust pastry is used up. You’ll get 12 cookies.

  • Using a meat tenderizer, crush the candies and place the crushed candies inside the cookies. If you want to hang the cookies on the tree, make a small hole on one side.

  • Bake in a preheated static oven at 350°F for 15 minutes. They should be golden brown. Let them cool completely before removing them from the tray, the center needs to harden.
