Tips
The sugar/cornstarch ratio is variable, normally 3-5 g of cornstarch are used for 100 g of granulated sugar, I add more to preserve it longer.
Besides using white sugar, you can also make powdered sugar with brown sugar. The procedure is the same, but you will certainly need to blend it multiple times to achieve the right texture.
You can flavor powdered sugar by adding aromas like: bourbon vanilla powder, dried citrus peels, cinnamon, etc.
It is essential to have a good blender for the success of the recipe, one that can spin at at least 35,000 rpm. For this reason, the recipe can also be made using kitchen robots like Bimby, Monsieur Cuisine, or a handy chopper to attach to the stand mixer Kenwood Cooking Chef.
