To prepare smoky pasta you can use any type of aged or stringy cheese you have available, creating a new mix each time.
The spices can also be varied to your liking.
You can use any type of pasta as long as it’s short.
If you can, add some grated salted ricotta (preferably smoked), it will give the dish an extra kick.
