Storage
The dumplings can be stored for one day in the fridge in an airtight container.
They can be frozen. When you want to use them, there’s no need to defrost; just immerse them directly in the boiling broth.

Tips
The amount of flour depends on many factors: size of the eggs, moisture of the bread, etc. If you notice that the indicated amount of flour is not enough, add more.
In some broth dumplings recipes, raw ham or the same meat used for the broth is used instead of speck.
For flavoring, in addition to using parsley, the Tyrolean version uses chives and onion.
Traditionally, stale bread is used, but nothing prevents you from using fresh bread.
For a richer version, boil them in salted water and then sauté them in a pan with butter and sage.
In more modern recipes, the dough is enriched with aged cheeses.
