How to make Zucchini alla Pizzaiola in the Pan
To prepare Zucchini alla pizzaiola in the pan, first wash the zucchini, remove the ends, and cut them into very thin slices, 1/8 inch. If you can’t do it by hand, feel free to use a mandolin at intermediate thickness. At the bottom of a small pan 5.5 inches in diameter, put some tomato sauce (I had prepared it in advance following this recipe) and arrange the zucchini slices in concentric circles.
After completing the first layer of zucchini, season with salt and pepper, some chopped mozzarella, more sauce, dried oregano, and start the layering again.
On the last layer, put plenty of Parmesan and oregano.
Move on to cooking: start with high heat on the smallest burner. As soon as it starts sizzling, lower the heat, put a lid on, and continue cooking for 20 minutes. If the zucchini is soft enough, remove the lid, increase the heat, and let it dry well. If the zucchini is not cooked to your satisfaction, you can extend the cooking time as needed. Finally, finish with fresh basil leaves and enjoy your meal!
