Ingredients for the Artichoke Salad
- 4 artichokes
- 3.5 oz extra virgin olive oil
- 1 lemon juice
- 2 cloves garlic
- 1 bunch chopped parsley
- 1 sprig mint (chopped)

Steps
To prepare the artichoke salad, remove the outer leaves,
shorten the stem,
remove the tougher outer layer, and finally
cut off the tips with a sharp knife.
Soak the artichokes in acidulated water to prevent them from browning.
Take the artichokes, cut them in half, remove the choke with a small knife, and
then slice them.
Soak them again in the acidulated water, and continue this way with all the artichokes.
Meanwhile, bring water to a boil in a pot and blanch the artichokes for about 10 minutes.
When they are ready, transfer them to a bowl and let them cool.
Meanwhile, prepare an emulsion in a jar by pouring the extra virgin olive oil, the juice of one lemon,
the chopped parsley,
