Steps
To prepare baked pasta with potatoes and sausage, start by cleaning and peeling the potatoes, then cut them into very small cubes.
After removing the casing from the sausage, add a dash of oil to the pan and crumble the sausage.
Also add the potatoes, season with salt and pepper, and pour in 1/2 cup of water.
Cook on low heat until the water is completely absorbed and set aside.
Meanwhile, put the water on for the pasta and prepare the béchamel by melting a knob of butter.
Now add the flour and stir with a hand whisk, pour in the milk, salt, pepper, and nutmeg, and continue to stir
until it thickens and set aside.
Drain the pasta a few minutes before the time indicated on the package and transfer it to a large enough bowl. Add the potato and sausage mixture,
diced mozzarella,
the béchamel,
Parmesan, keeping a little aside, and
mix everything.
Now transfer the pasta to a baking dish,
and sprinkle with the remaining cheese.
Bake in a preheated oven at 392°F for 20 minutes and 5 minutes under the grill to form a crust.
Let rest for 10 minutes and serve.
