Air Fryer Gratinated Zucchini

Air Fryer Gratinated Zucchini is a simple, delicious, and super easy side dish to prepare.

It’s a light and tasty side with few calories, perfect for the nice weather.

I have many zucchini recipes, but when summer heat makes us not want to spend much time in the kitchen, what we need is an easy, quick recipe with few ingredients.

In short, a last-minute recipe that is still flavorful and tasty.

For the vegan version, do not add the grated cheese.

For preparing the gratinated zucchini, use medium-sized zucchinis, from which you can get equally sized slices for even cooking.

The ingredients we need are few and often already available in our kitchens: obviously, we need zucchinis, grated cheese, cornmeal, or you can substitute with breadcrumbs, parsley, olive oil, and salt.

The first thing to do is slice the zucchinis into rounds in a bowl (to make them thin and uniform, my advice is to use a mandoline).

Then add the other ingredients and finally give a good stir to distribute them well.

Besides adding flavor, the grated cheese will serve as a binder: indeed, the moisture of the zucchinis (which will have released some water after salting) will help the cheese stick and melt slightly, binding everything together.

A clever zucchini recipe, because it can be prepared in advance and then served when needed, as it is good both hot and cold.

If there are leftovers, they keep well for a day in the refrigerator.

Before enjoying, leave them for half an hour at room temperature.

They can also be enjoyed outside the home, for a work lunch, for example, as a side dish to a main course.

Being a vegetarian recipe, it’s very easy to make when you have guests with this dietary requirement or when you want to indulge in a light yet absolutely tasty side dish.

Ingredients for Air Fryer Gratinated Zucchini

  • 2 zucchini
  • 1/3 cup Parmesan
  • 2 tablespoons cornmeal (or breadcrumbs)
  • to taste extra virgin olive oil
  • to taste parsley
  • salt

Steps for Air Fryer Gratinated Zucchini

  • First, slice the zucchinis into thin rounds (perhaps with the help of a mandoline) and place them in a bowl.

  • Salt, add chopped parsley.

  • Now add a good drizzle of oil, then 2/3 generous spoonfuls (of grated cheese).

  • Give a good stir with your hands to distribute the ingredients well.

  • At this point, place a sheet of parchment paper in the air fryer basket and arrange the zucchinis on top, spreading them out and trying to overlap them as little as possible.

    Finally, sprinkle with cornmeal.

    (You can substitute the cornmeal with breadcrumbs).

  • Drizzle with oil (or a few sprays of olive oil spray), insert the basket, and cook at 356 °F for 15-16 minutes.

  • Once ready, let them cool for just a couple of minutes, then plate.

Tips and Curiosities

To get crispy zucchinis, it’s important to choose the vegetables well, which should preferably be tender and small.

In this case, zucchinis are less watery and are better suited for this type of recipe. They will become super crispy in just a few minutes.

You can store the zucchinis for 1 day in the refrigerator.

Do not freeze.

If you don’t have an air fryer, use a baking sheet and bake them for 20/23 minutes at 374 °F. Always check.
