We mix the powders and then incorporate a mixture of milk and vegetable oil. The dough must be worked for a long time to make it nice and elastic.
At that point, we let it rise for the first time, then divide it into eight parts and let it rise a second time.
We fry the dough discs and then immediately coat the sweet pancakes in granulated sugar, so the grains will stick easily.

Amusement Park Pancakes
- 2 cups all-purpose flour
- 2 cups bread flour
- 2.5 tsp dry yeast (or 14 fresh)
- 1/4 cup sugar
- 1 1/4 cups milk (warm 70 degrees Fahrenheit)
- 1/4 cup sunflower oil
- 1 pinch salt
- q.s. peanut oil (for frying)
- q.s. sugar (for sprinkling)

Steps
Amusement Park Pancakes
In a bowl, combine the flour, packet of dry yeast, and sugar. Mix all the ingredients.
Pour in the warm milk and add the sunflower oil.Start mixing.
Turn the dough onto the work surface and knead it thoroughly until you obtain a homogeneous and elastic consistency.
Place the dough in a bowl, cut a cross, cover with plastic wrap, and let it rise until doubled in volume.
It will take about 120 minutes.
(To slightly shorten the time, you can let it rise in the oven with the light on).
Take the dough, form a loaf, divide it into 8/10 pieces, and make as many balls.
Cover the balls with a cloth and let them rise for another 25/30 minutes.
Place a pot on the stove and heat the oil for frying.When the oil is hot, start frying.
The ideal temperature is 340 °F. (Do the toothpick test).
Work the balls with your hands, stretching them to form disks.
(Stretch them with your hands, do not use a rolling pin).
Plunge them directly into hot oil and cook them one at a time, turning occasionally.
Serve the amusement park pancakes hot and crunchy, and enjoy them as a snack with friends or family.

Tips and Storage
For pancakes like those at the amusement park, I recommend cooking them at the moment, as the best way to serve fried foods is to have them hot!
I use peanut oil for frying, perfect for giving foods crunchiness.
My tip for cooking this recipe well is to do the toothpick test: when it forms many bubbles around it, it means the oil has reached about 340°F. Perfect!
They are best fresh, but if you wish, you can also freeze them in plastic food bags. But they are so good that they don’t end up in the freezer because they finish quickly.
