Asparagus and Bacon Rolls. These asparagus and bacon rolls are super quick and tasty, making them an easy second course to prepare with just a few ingredients.
Sweeter and more delicate, this type of asparagus is a true delicacy. Simple and accessible even for those with little cooking experience.
For this recipe, I’ll provide both the air fryer and oven cooking methods.
What makes white asparagus different from the more common green ones? Besides the obvious light color, the taste is more delicate, generally sweet and aromatic.
Rich in vitamins, especially the B group, they contain a lot of fiber and few calories (less than 30 per 100 grams), being composed of almost 90% water.
To ensure these benefits are effective, it’s important to consume a fresh product that is cooked properly.
When purchasing, white asparagus appears firm, without dark spots, with a bright color and closed tips.
At the time of preparation, the lower part of the spear is removed, as it is hard and woody, by breaking it with your hands: at this point, the asparagus is rinsed, and you can use a peeler to remove the outer skin, which might be thicker.
Accompanied by some tasty second courses, they are also great for a quick dinner! In short, a tasty and super versatile recipe that will win everyone over.
I’d like to mention that I used white asparagus, but green asparagus works just as well.

Ingredients
Asparagus and Bacon Rolls
- 1 bunch white asparagus (or green)
- 3.5 oz bacon (or cooked ham or speck or turkey breast slices)
- to taste extra virgin olive oil
- to taste Parmesan cheese

Steps
Asparagus and Bacon Rolls
Wash the asparagus and dry with a cloth.
Cut off the toughest part at the base, then use a peeler to peel the lower part of the asparagus.
Blanch in plenty of lightly salted water, or steam for about 7/8 minutes.
Tip: Don’t add too much salt while cooking the asparagus, considering the bacon will already be quite flavorful.
Drain the asparagus and wrap them in pairs with a slice of bacon.
Roll the bacon well, covering part of the asparagus stem, leaving the tips exposed.
Place the asparagus rolls on a baking tray, spaced apart, and sprinkle each bunch with grated cheese.
Drizzle everything with a little extra virgin olive oil.
Bake in the oven preheated to 392°F in fan mode for about 10 minutes.In air fryer at 392°F for 5/6 minutes.
(Obviously, check each electric oven and air fryer as they have their own timings).
Serve the asparagus and bacon rolls hot or warm

Tips
The stuffed rolls can be stored for a maximum of 1/2 days in an airtight container in the refrigerator. Before serving them again to your guests, however, you should reheat them in the oven or for a few seconds in the microwave.
You can replace the bacon with speck, and green asparagus works just as well.
