Ingredients
Bread Cordon Bleu
- 6 slices long sandwich bread
- 2.8 oz ham
- 4.2 oz mozzarella for pizza (or fresh provola)
- 4 eggs (medium)
- as needed flour
- as needed breadcrumbs
- 2 tablespoons milk
- as needed olive oil (spray)
- as needed salt

Steps
Bread Cordon Bleu
Flatten the slices of sandwich bread with a rolling pin.
Cut them with a pastry ring or a round cup to obtain bread discs.
Fill one disc with 2 slices of finely cut pizza mozzarella, a piece of ham, and another 2 slices of pizza mozzarella.
Cover with another bread disc and seal the edges by pinching them with your fingers.
Proceed this way for all the cordon bleu.
Then pour some flour into a plate, breadcrumbs into another, and in a deep plate the eggs with 1/2 tablespoon of milk that you will beat with a fork with a little salt and pepper.
Press the edges well and pass first in the flour, then in beaten eggs, and finally in breadcrumbs.
Place the cordon bleu in the air fryer tray lined with parchment paper, spraying a little extra virgin olive oil.
Cook at 392°F for 10 minutes, turning them halfway through.
Or in the oven.
Arrange the pairs on a baking tray lined with parchment paper and drizzle a little oil over them.Bake in a fan oven at 356°F for 15 minutes, or in a static oven at 374°F for 15 minutes.
(I want to remind you that every oven and fryer has its timing and different degrees, so check accordingly).
Serve immediately, hot and gooey your mozzarella in carrozza in the air fryer.
My nephews enjoyed them a lot with some fries, obviously cooked in the air fryer.

Tips
If you like buffalo mozzarella as it is fattier and tastier, it’s fine.
You can repeat the breading step twice to make it crunchier and to prevent the mozzarella from leaking out.
To prevent the mozzarella from melting during cooking, it is necessary that the sandwich bread is well breaded.
