Ingredients

Breadcrumbed Anchovies in the Oven or Air Fryer

  • 1.32 lbs anchovies (weight when cleaned)
  • 2 eggs
  • 1/2 cup Parmesan cheese (or pecorino)
  • as needed breadcrumbs
  • as needed extra virgin olive oil
  • lemon (juice and grated zest)
  • salt
  • pepper

Steps

Breadcrumbed Anchovies in the Oven or Air Fryer

  • Clean the anchovies.

    Clean the anchovies by removing the head and innards, then open them like a book and remove the bone. Rinse them well and dry them with paper towels.

    (If using frozen anchovies, make sure they are well thawed and dry).

  • In a bowl, beat the eggs and add the lemon juice and a pinch of salt.

    Beat everything with a fork.

  • Take the cleaned anchovies, place them in the egg and lemon mixture and let them marinate for half an hour.

    In the meantime…
    In a bowl, mix the breadcrumbs, Parmesan (or Pecorino), and organic lemon zest, salt, and pepper.

  • After the time has passed, bread the anchovies well on both sides.

    (Pass each anchovy through the breading, pressing gently to adhere the mixture well).

  • Place them on a baking tray lined with parchment paper or in the air fryer basket and drizzle with oil.

  • Oven Cooking Bake at 375°F for about 20/25 minutes.

    Air Frying Cook at 356°F for 15/18 minutes. Turn them halfway through cooking, until golden and crispy.

    Of course always check both the oven and the fryer as cooking times may vary.

    In a pan Fry a handful of anchovies at a time, without exposing them too much to the heat. As soon as they are slightly colored, lift them with a spider and transfer to a wire rack for frying.

  • Serve the anchovies hot, after salting them.

  • Once ready, serve the anchovies with a lemon wedge and a fresh salad.

Oh, a small suggestion: instead of breadcrumbs, you can also use oat bran and the result will be just as tasty and crispy.
