Oven-baked breaded squid rings are prepared by mixing squid with a blend of simple and economical ingredients.
A finely chopped mix of parsley, whole garlic for aroma (I don’t chop it because not everyone likes it, but you can do as you prefer), grated lemon zest, olive oil, and salt will delicately flavor the dish; cherry tomatoes will be the other star ingredient, and finally, breadcrumbs and semolina flour will create that irresistible gratin that will cover the squid rings.
Once perfectly breaded and mixed with the rest of the ingredients, we bake our squid rings in the oven for half an hour and voilà: they’re ready to be served hot!
The ideal is to serve them right out of the oven, still hot, with the golden and crunchy breading, the main feature of this dish!
Gratinated baked squid is also a clever recipe if you’re planning a multi-course dinner because you can prepare the breaded squid rings in advance and put them in the oven just about twenty minutes before serving, giving you time to focus on other dishes.

Ingredients for Breaded Squid Rings
- 1.76 lbs squid (clean weight)
- 7 oz cherry tomatoes
- 1 to taste lemon (grated zest)
- 2/3 cup breadcrumbs (or gluten-free)
- 2/3 cup semolina flour (not suitable for celiac, use gluten-free breadcrumbs)
- 1/4 cup Parmesan cheese
- 1 bunch parsley
- to taste salt
- pepper
- to taste extra virgin olive oil

Steps for Breaded Squid Rings
To prepare the oven-baked breaded squid, start with the squid, which should be cleaned internally and externally before cutting into rings.
How to clean squid…
Rinse the mollusks under running water, then pull the head with the tentacles and remove the internal cartilage.
Remove the innards and rinse them again.
Also remove the skin covering them by making a light incision on the back. Finally, cut the squid into rings.
You can use large or medium-sized squid.
Make rings of the same width so that the baking is even.
Tip: (you can also use the tentacles. However, you should remove any remaining cartilage and divide the tentacles in half).
Now focus on the cherry tomatoes, which after washing, you should cut in half.
Finely chop the parsley, previously washed and patted dry with a cloth.
In a bowl, now add the squid rings and halved cherry tomatoes and pour in the mix of breadcrumbs, semolina flour, and grated cheese.
Now pour in the parsley mix and season with salt to taste.
Now also season with ground black pepper, in the quantity you prefer.
Finish by adding grated lemon zest, which will give an even more intense aroma and taste to your dish.
Mix now to evenly distribute.
Now place the squid in a non-stick baking tray lined with parchment paper and drizzled with extra virgin olive oil.
A drizzle of extra virgin olive oil and the squid rings are ready for the oven.
Bake at 392°F (200°C) for about 15/20 minutes or until you have well-golden and gratinated squid.
Your oven-baked squid rings are now ready to be served while they’re still hot.
Ready to be devoured, you’ll taste the delight and even lick your fingers.

Tips
With the exact same recipe, besides oven-baked squid rings, we can also prepare calamari. Use the same amount of calamari rings instead of squid, and the recipe will be even more flavorful.
We can personalize this seafood dish in many other ways, for example with aromatic herbs and spices of choice to flavor the gratin.
If fresh squid is not available, frozen ones can be used. Just thaw them in advance and follow the recipe.
Like all gratin recipes, even for squid rings, the most delightful aspect is the crunchy gratin when fresh out of the oven. If any remain, they can be stored in the fridge, tightly closed in a container or a food bag, for a maximum of one day. They will lose their crispiness but will still be flavorful.
