Batter-fried cardoons in air fryer. Easy and tasty recipe that’s worth trying, it’s delicious and light.
A recipe my mom always made; it had been years since I last ate them and I was really craving them. My mom honestly deep-fried them, I tried in the fryer and they are delicious.
Batter-fried cardoons are tasty and flavorful, best eaten hot, and cooked this way they are lighter.
It’s known that all batter preparations have an extra touch; after appreciating them au gratin, I prepared them fried in batter too, truly delicious.
Not too well-known, but they can be used in recipes for first courses, main dishes, and sides; they are cardoons.
After frequently visiting, in vain, my trusted greengrocer, I finally found them in a well-stocked supermarket (thankfully) and immediately started cooking for this recipe.
Very well-known and used in cooking, the cardoon is a very versatile winter vegetable that fits in many recipes.
The cardoon has a hard, fibrous consistency but belongs to the same family as the artichoke.
It resembles celery, characterized by its white ribs. In terms of taste, they are indeed more similar to artichokes, low in calories.
Precisely because of their low-calorie content, they can accompany any preparation, even particularly greasy ones. Cardoons are highly versatile, and the stalks can also be used for fantastic risottos.
The cardoon is also called a wild artichoke.
Before frying them, they must be boiled. But let’s see how to prepare them.
As you go, place the cleaned and cut ribs in a bowl containing water acidulated with lemon juice, to prevent them from blackening.

Cardoons in Air Fryer
- 1 cardoon
- 1 egg
- 1.5 cups flour (plus a tablespoon for cooking in water)
- 3/4 club soda (cold from the fridge)
- salt
- to taste extra virgin olive oil (extra virgin olive oil)
- 1 lemon (juice)

Batter-fried cardoons in Air Fryer
To purchase good quality plants, check that the stalks are white and compact.
If they have green areas, the cardoons will be less fresh or even bitter.Begin by cleaning the cardoons by separating the ribs from the core and removing the leaves.
Remove the hard, woody fibers from each rib using a sharp knife. As you clean the ribs, dunk the cardoons in acidulated water.
(Water and lemon).
Rinse the cardoons under running water.The cardoon must be cooked for an hour in water with lemon juice and flour to allow its ribs to maintain their white color.
Once cooked, drain the cardoons and let them cool.
Sift the flour into a bowl, add the egg and a pinch of salt.
Mix well the flour and egg with a hand whisk or fork.
Gradually add the very cold sparkling water from the fridge, continuing to mix with the whisk or fork. You need to eliminate all lumps.The batter should be smooth but not too fluid.

Cover the bowl with cling film and let it rest for 30 minutes. Before using, mix again with the whisk or fork.
The batter is ready to be used!
At this point, dip the cardoons into the batter.
Lay them in the air fryer basket, covered with parchment paper.
Season them on top with extra virgin olive oil using a spray bottle.
Cook the breaded cardoons for 8 minutes at 392°F (200°C), remembering to turn them halfway through to achieve even browning.
During cooking, you can spray them again with a puff of oil.Cooking times vary from fryer to fryer, so always check.
Serve them hot.

Tips
If you don’t have an air fryer … You can deep fry them or …….
Place the cardoons on a baking tray lined with parchment paper.
Bake them at 356°F (180°C) for 17 minutes, then another 3 with the grill.
Cook them for half the time on the lower rack and half on the upper one.
