Carnival Yogurt Fritters

Carnival Yogurt Fritters, soft, delicious, and full of sugar. They are amazing sweets that you can prepare in 5 minutes and do not need to rise.

This is a very easy and quick recipe; you will need a bowl, a hand whisk, a spoon, and you’ll prepare an exceptional batter.

They can also be carnival treats, to share with our guests at the end of lunch or serve at a costume party.

Moreover, it is a batter without butter and oil, somewhat light, even though we fry it later.

These sweet fritters are made with a classic yogurt batter that is very easy to prepare with ingredients we always have in the pantry.

To make them even more delicious and fragrant, I added a sachet of vanilla and grated lemon peel: they really take a step-up in quality.

The yogurt fritters are so good that you can’t stop at one. After frying them, I add a sprinkle of sugar on top, but they can also be eaten plain: they are still excellent.

To prepare these fritters, I recommend using classic plain yogurt, but you can also replace it with Greek yogurt in the same quantity.

The yogurt is not noticeable in the fritters; it is a fundamental ingredient in this recipe, try not to substitute it.

You can also add raisins previously soaked in hot water and rum to make them more delicious!

If we are really in the mood for indulgence, let’s enjoy them with a smear of hazelnut cream… they will be irresistible!

Ingredients

Carnival Yogurt Fritters

  • 2 cups all-purpose flour (or pastry flour)
  • 2 eggs (medium at room temperature)
  • 5 oz yogurt (or plain Greek yogurt)
  • 6 tbsp sugar
  • 1 packet vanillin
  • to taste lemon (grated peel)
  • 1 pinch salt
  • 2 tsp baking powder
  • 2 tbsp grappa (substitutable with orange juice, rum, or liquor of choice)
  • to taste peanut oil
  • to taste sugar

Steps

Carnival Yogurt Fritters

  • In a bowl, add the eggs, granulated sugar, the vanilla packet, and the grated lemon peel.

    Add a pinch of salt.

    (The eggs and yogurt must be at room temperature for a good result).

    Mix with a hand whisk. Add the plain yogurt and the liquor; I used grappa, but limoncello or Strega liquor is also fine.

  • Add the all-purpose flour and the baking powder, obviously sifted.

    (The powders must be sifted).

  • Mix until you get a homogeneous mixture.

    The batter is ready.

  • Heat the peanut oil in a small pot with high sides and a thick base.

    When hot, take the batter with two slightly oiled teaspoons and dip the yogurt fritters.

    Fry 4-5 yogurt fritters at a time.

  • When golden, drain on absorbent paper.

    Roll each fritter in granulated sugar and serve hot.

Advice

Advice. For optimal frying and delicious yogurt fritters!

Use peanut oil for frying because it has a higher smoke point.

The oil must be very hot, but cook on low heat, otherwise they burn and remain raw inside.

Use a teaspoon, not a tablespoon, simply because if you make them too big, the frying time increases and you risk finding them raw.

The oil temperature should be 338°F-347°F, if it exceeds this temperature, remove the pot from the heat before continuing to fry.

They cannot be baked, the batter is very soft.
