Ingredients

Chicken Breast Valdostana Style

  • 4 slices chicken breast
  • 4 slices cooked ham
  • 1 mozzarella (or fontina or dairy cheese)
  • to taste salt
  • to taste extra virgin olive oil
  • flour (to taste for coating)

  • Meat Tenderizer
  • Lid

Steps

Chicken Breast Valdostana Style

  • Take a large pan and heat 4/5 tablespoons of extra virgin olive oil.

    You’ll need chicken breast slices of normal thickness, neither too thin nor too thick.

    Pour the flour onto a plate and lightly coat them on both sides, shaking off excess flour.

    Place the floured chicken breast slices in the pan and cook for 4-5 minutes per side, adjusting for salt.

    Turn them halfway through cooking.

  • At this point, place a slice of cooked ham and 2/3 slices of mozzarella on each chicken breast slice.

    (I used mozzarella but you can also use fontina or asiago or a melting cheese).

  • Cover the pan with a lid and continue cooking until the mozzarella melts.

    Finish with a sprinkle of chopped parsley or a sage leaf.

    Plate and serve the cheesy chicken!

Advice

The Valdostana chicken should be enjoyed as soon as it’s made, but if there’s any left, you can store it in the refrigerator, in a glass container, for a couple of days.

For cooking the Valdostana chicken, I used extra virgin olive oil. If you prefer, you can use only butter by increasing the amounts.

Instead of flour, you can use cornstarch, rice flour, or flour with a low glycemic index to coat the slices. The rest of the preparation remains unchanged.

The amount of cheese can vary according to your taste. Adjust accordingly.
