Ingredients for Chicken Breast with Cherry Tomatoes

  • 1.6 lbs chicken breast
  • 1 cup cherry tomatoes
  • to taste basil
  • 1 clove garlic
  • as needed all-purpose flour
  • Half cup dry white wine
  • as needed extra virgin olive oil
  • Half cup water
  • Half teaspoon sugar
  • salt
  • pepper

Steps for Chicken Breast with Cherry Tomatoes

  • Pound the chicken breast slices with a meat tenderizer between two sheets of parchment paper. If you don’t have a meat tenderizer, use a glass.

    Then, coat the chicken with flour on both sides.

    Meanwhile, in a large pan, pour a couple of tablespoons of oil and sauté some finely chopped basil leaves and the garlic clove split in half.

  • Add the floured chicken breast and let it brown over medium heat, turning it to cook evenly on both sides until golden. Season with salt and pepper.

  • Once ready, move them to a plate.

  • In the same pot, pour the cherry tomatoes cut into pieces.

    Let them wilt.

  • Add a bit of salt, then reintroduce the chicken.

    Deglaze with white wine, let it evaporate, add the water and the half teaspoon of sugar to give a slightly sweet and sour flavor note.

    Cook for a few minutes so that a creamy sauce forms.
