Chickpea and Spinach Balls

Chickpea and Spinach Balls in an air fryer. They are light, healthy and delicious; the recipe is vegetarian and will please the whole family!

The recipe does not include eggs and has the lightest, healthiest cooking possible, and they even turned out great, amazing!
You can enrich the balls with grated cheese or with a little chickpea flour.
Instead of spinach, you can use other vegetables such as zucchini, broccoli, peppers or even make a mix of vegetables.
With the air fryer, they’ll be ready in minutes!
You can also cook them in a traditional oven or in a non-stick pan with a little oil.

As for the chickpeas, you can easily use the dried ones cooked by you, alternatively, to make the recipe faster, I recommend organic glass jar chickpeas, very nutritious and tasty.

Ingredients

Chickpea and Spinach Balls

  • 7 oz cooked, boiled chickpeas (drained weight, canned ones are also fine)
  • 6 oz frozen spinach
  • 1 clove garlic (small and optional)
  • Half lemon (juice)
  • to taste salt
  • pepper
  • 1/3 cup chickpea flour
  • 1.8 oz latteria cheese (like galbanino (vegan version specific cheese)
  • to taste breadcrumbs (For breading or gluten-free)
  • to taste olive oil (sprayed)

Steps

Chickpea and Spinach Balls

  • In a pot with cold water, add the frozen spinach and bring to a boil. Then cook them for about 10 minutes from boiling over medium heat.

    When the spinach is cooked, drain them very well (if possible, also squeeze them, be careful not to burn yourself), then sauté them in a pan with a little extra virgin olive oil until they are dry.

  • Add the spinach to the food processor along with the chickpeas and pulse it intermittently, chopping the two ingredients not too finely.

  • Add chickpea flour to the spinach and chickpea mixture and knead until you get a homogeneous mixture.

    Adjust salt and pepper.
    Prepare a flat plate with breadcrumbs and, if opting for air fryer cooking, a baking sheet covered with parchment paper.

  • Take a walnut-sized amount of the mixture.

  • Flatten it between your hands and place a piece of melting cheese in the center.
    Close the mixture around the cheese to form your ball.

    Roll it in the breadcrumbs and proceed the same way until you have used all the mixture.

  • For cooking, you can proceed in different ways, always turning the balls halfway through cooking:

    In an air fryer at 392°F for 15-18 minutes;
    Or in a pan with 1 tablespoon of oil for 15 minutes.
    While in the oven at 392°F for 20 minutes.
    For oven and air fryer cooking, I recommend brushing the outside of the balls with a little olive oil, so they come out golden and crispy without being fried.

Tips

You can prepare them in advance and store them in the fridge for up to 24 hours before cooking.

Once cooked and cooled, you can store them in an airtight container in the fridge for 3 days or in the freezer for up to a month.
