Ingredients for Cold Pasta
- 11 oz bow tie pasta (or mezze maniche, etc.)
- 1 burrata
- 4.2 oz smoked salmon
- as needed extra virgin olive oil
- as needed arugula (but not too much)
- 7 oz cherry tomatoes
- as needed salt

Steps for Cold Pasta
First, cut the cherry tomatoes into small pieces, then put them in a large bowl and season with a pinch of salt and extra virgin olive oil. Finally, slice the salmon into strips and add it to the tomatoes.
Add a few leaves of previously washed, dried, and chopped arugula.
Cook the pasta in plenty of salted water, then when the cooking time is up, rinse it under cold running water to stop the cooking, and then transfer it to the bowl.
Dress the pasta with the tomatoes, arugula, and salmon, plate it, and add the stracciatella with freshly grated lemon zest at the end.
Plate with a few basil leaves.
