Dove muffins are small pastries that smell of almonds with chocolate chips.

Easter brings with it many traditional sweets: from the timeless dove cake to the exquisite pastiera, to the sweet Easter pizza typical of my husband’s region. But if we have little time for long preparations, we can make my dove muffins.

These are simple muffins but decorated as if they were small doves.

A different but fun and tasty idea to bring a themed Easter dessert to the table without too much work.

Inside the dove muffins, I put chocolate chips because my husband Max doesn’t like candied fruit, but feel free to choose according to your taste and preference.

A very simple and quick recipe for delicious and practical muffins, perfect to take with us for Easter Monday excursions. Just close them in food bags or an airtight container and put them in the cooler bag. Then take them out a few minutes before enjoying them to let them temper and regain all their fragrance!

Ingredients for Dove Muffins

  • 2 1/2 cups all-purpose flour
  • 3 eggs (room temperature)
  • 1/3 cup vegetable oil
  • 3/4 cup sugar
  • 3/4 cup milk (room temperature)
  • 1 lemon (zest, grated)
  • 1 orange (zest, grated)
  • 3.5 oz dark chocolate chips (or candied fruit)
  • 1 vial almond flavoring
  • 1 packet baking powder
  • to taste sugar sprinkles
  • 1 pinch salt
  • to taste almonds

  • 2 Bowls
  • Sieve
  • 18 Cupcake liners
  • Kitchen scale
  • 1 Measuring jug
  • Cupcake liners colored paper
  • Spatula

Steps for Dove Muffins

  • First, separate egg whites from yolks in two bowls.

    Add sugar to the yolks.

  • Add the zest of an orange, a lemon, and a vial of almond flavoring.

  • With the help of the whisks, start mixing all the ingredients and gradually add the vegetable oil while continuing with the electric whisks.

  • Add milk and the sifted flour and baking powder a little at a time, continue to mix very well with a spatula.

  • Beat the egg whites until stiff.

  • Now add the egg whites in two stages.

    First, add half and fold from bottom to top.

  • Once the egg white is well incorporated, add the remaining egg white and fold from bottom to top.

  • Add chocolate chips to the batter and mix well.

  • Fill the muffin liners 3/4 full (I usually use an ice cream scoop, but if you don’t have one, a regular spoon works just fine).

    (I usually use a muffin tray with paper liners inside, but since this batter makes quite a few, I used individual aluminum molds and inserted the paper liner) you do as you see fit.

    Distribute the sugar sprinkles and a couple of almonds as desired, then bake in a preheated static oven at 350°F for 20/25 minutes.

    Always do the toothpick test.

Tips

As I mentioned, for an even more indulgent version of this recipe, you can add candied fruit instead of chocolate chips.

Dove muffins stay as fresh as freshly made for a couple of days under a glass dome.
