Fake egg white pizza in a pan. Super easy, fat-free, and quick to cook in a pan, a light and healthy dish, perfect for those on a diet or who prefer to follow a balanced diet without too much fat.

Gluten-free and yeast-free fake egg white pizza, ready in less than 20 minutes. 

A fake pizza “not fried” that cooks in a pan and puffs up during cooking, resulting in a super soft and tender texture. I was skeptical because pizza is pizza and it is sacred, but this version satisfies a craving without the guilt.

Flavored with grated cheese and a few dollops of crescenza and plenty of cherry tomatoes, it is highly protein-rich because, as you know, the fatty part of eggs is the yolk.

The recipe is very simple and prepared in a few minutes: egg whites, parmesan, and a pinch of salt.

It can be enriched with a variety of ingredients such as vegetables (zucchini, fennel, onions, potatoes) or ham, speck.

It is not fried because I found a clever method to cook it in a pan: 2 sprays of oil on the bottom and slow cooking with a lid!

Of course, you could also bake it in the oven, in a round mold!

Feel free to season with aromatic herbs and make it tastier and better than ever: soft, very tender, to enjoy with a side of vegetables.

Obviously, it’s a recipe that can also be adapted to dietary intolerance needs like lactose intolerance, using scamorza or other lactose-free cheese.

It’s not a real pizza, I know, but don’t scold me, here’s the egg white pizza. You can’t taste the egg whites (at least I didn’t notice them).

Ingredients

  • 8 egg whites egg whites (n brick, or about 8 egg whites)
  • 2 tbsps parmesan (heaping)
  • 2.5 oz stracchino (or mozzarella or provola)
  • 8 piccadilly tomatoes
  • to taste oregano
  • salt
  • to taste extra virgin olive oil
  • to taste basil

  • In a bowl, beat the egg whites with a fork or hand whisk for a few minutes.

    Add the parmesan, salt.

    Mix well. Proceed to cooking.

  • Spray the bottom of a 7.9-8.7 inch (20-22 cm) pan with olive oil (two sprays of oil or a few drops brushed with a brush are sufficient).

    Pour in the mixture immediately, without heating it.

    Put the lid on and let it cook for 6/7 minutes on low heat. You will see it puff up.

    When the bottom is golden, you can decide to flip it or continue cooking until the top is cooked as well.

    (As you can see, I chose not to flip it).

    Arrange the thinly sliced tomato pieces and dollops of stracchino, cover with a lid, and cook on low flame for about ten minutes.

    Near the end, I sprinkled some oregano and a few basil leaves, covered for 1 minute.

    The fake egg white pizza is ready to be enjoyed: super soft!
