Ingredients
Ham Provola and Potato Pie
- puff pastry (round)
- 3 potatoes (large, if small, also 5)
- 10.5 oz ham
- 7 oz smoked provola (or classic or mozzarella etc)
- 3 tablespoons parmesan
- salt
- pepper
- 1 egg yolk (with a tablespoon of milk to brush)

Steps
Ham Provola and Potato Pie
To prepare the puff pastry pie with potatoes and ham, start by cooking the potatoes.
Wash them and immerse them in a pot containing cold water.
Bring to a boil and cook for about 30 minutes (the actual cooking times may depend on the type of potatoes used and their size).
As soon as they can be pierced with the tines of a fork, they are ready (do not overcook them to prevent them from absorbing too much water).
Drain them, peel them, and slice them.
Open the first roll of puff pastry and use it (with all the parchment paper) to line a 10-inch diameter mold.
(You can use the oven or air fryer plate or a baking tray)
Prick the base, distribute slices of ham on the bottom.
Add slices of smoked provola, (mozzarella or mozzarella, according to your taste) always sliced.
Finally, arrange the potato slices.
(You can also choose to reduce the potatoes into chunks, thus giving more consistency to the filling of your savory pie).
Finish with a layer of grated cheese, and a sprinkle of pepper.
Now fold the edges to create a border for your savory pie and brush with a mixture of egg yolk and a tablespoon of milk.
(If you like, use sesame seeds or poppy seeds).
Bake the savory pie in a preheated oven, in fan-assisted mode at 400°F, for about 20-25 minutes or until the pastry has reached a nice golden color.
If you have a static oven, bake the savory pie at 400°F for about 30-35 minutes or until the pastry is golden brown.
If you have an air fryer, prepare the savory pie in the air fryer basket, in the same way as described in the recipe, then cook it at 400°F for about 15-18 minutes, or until the edges of the pastry have turned golden.
(I want to remind you that each air fryer and oven have their own timing so check).
Once the puff pastry is golden, turn off the oven and let cool.

Tips
The savory pie with potatoes, ham, and provola should be consumed hot to appreciate it best. However, you can keep it for up to a day and reheat it by putting it back in the oven or air fryer.
You can store the savory pie in the refrigerator in an airtight container for a couple of days.
When using puff pastry, be sure to unroll it carefully and prick it with a fork before adding the filling.
This step is essential to prevent it from puffing up during cooking. You can also brush the edge of the pastry with a little egg yolk to get a golden and shiny color.
You can replace the bacon with ham with mortadella or other deli meats of your choice.
You can replace the galbanino with mozzarella with provola or whatever you have in the fridge.
You can also choose not to use parmesan and replace it with pecorino.
