Hunter’s Chicken with Olives

  • 1 chicken (whole)
  • 12 cherry tomatoes
  • carrot (1)
  • 1 onion
  • 1 stalk celery
  • 1 glass dry white wine
  • to taste extra virgin olive oil
  • 1 sprig rosemary
  • 2 leaves sage
  • 1 leaf bay
  • to taste salt
  • pepper

Steps

Hunter’s Chicken with Olives

  • Cut the chicken into pieces, removing the insides but leaving the skin (you can ask the butcher to do this for you).

    Pour the extra virgin olive oil into a large pan or casserole.

  • Add the chopped onion, carrots, and celery.

    In the meantime, prepare the herb blend: chop garlic, sage, and rosemary, and add a pinch of chili pepper.

    Put the blend in the pan with the sauté and add the whole bay leaves.

    Now place the chicken parts in the pan, making sure they do not overlap each other. Let them brown for 15 minutes, turning them occasionally.

  • Deglaze with the wine and let the alcohol evaporate without a lid.

  • Add the chopped tomatoes and olives.

  • Now you can put the lid on the pan and continue cooking.

    This takes about 50/55 minutes on moderate heat.

    If necessary, you can add a ladle of hot water or vegetable broth.

    Serve the hunter’s chicken very hot with plenty of cooking sauce.

Tips

You can store the hunter’s chicken for 2 days in the fridge in an airtight container. Although not ideal, you can freeze it along with the sauce.

  • Can I use only chicken thighs?

    In hunter’s chicken, you enjoy every part of the chicken, but if you prefer, you can use only 2.6 lbs of thighs (with drumsticks).
