As a lover of meatballs, today I embark on making them. A simple dish but with a surprise effect, which will bring you great satisfaction.
I love meatballs because they can be made in many ways and with many ingredients, offering almost infinite variations.
Meatballs with hard-boiled egg surprise are among the most sought-after meatballs even by children; in fact, with their mystery of surprise, they manage to be the main attraction for both young and old.
If you want to change the taste of your meatballs, you might consider enriching the meat by adding peeled and crumbled sausage or minced mortadella.
A quick preparation for an amazing meal.
It was usually the Sunday sauce that my mom often made, using the sauce to dress pasta or gnocchi or ravioli, and the meatballs were then served as a second course.
The meat gave a nice taste to the sauce and filled the house with a wonderful aroma.
The main ingredient for making good meatballs is ground meat, to which softened bread crumbs, eggs, and Parmesan and Pecorino cheese are added.
For the meat, I recommend mixing ground beef and pork, which being fattier will make the meatballs more flavorful and tender.
Even the bread is fundamental; use good homemade bread, preferably dry, to soak well in water; milk is not needed, then squeeze well with your hands before adding it to the meat.

Ingredients for Meatballs in Sauce with a Surprise
- 1.5 lbs mixed ground meat (pork, beef, veal)
- 1 egg
- 1 stale bread (large without crust)
- garlic powder (optional)
- salt
- pepper
- to taste breadcrumbs
- 1.8 oz grated Parmesan cheese
- chopped parsley (to taste)
- 4 eggs
- 21 oz tomato sauce
- to taste extra virgin olive oil
- 1 clove garlic
- salt

Steps for Meatballs in Sauce with a Surprise
First, place the eggs in a saucepan with cold water, bring to a boil, and once boiling, cook for 9 minutes.
Once the cooking time is over.
Drain the eggs, lightly crack the shells to break them slightly, and cool them in cold water.
This way, when they have cooled, the shells will come off more easily.
Place the stale bread in a bowl with cold water to soften it.
When the bread is thoroughly softened, squeeze it well.Place the meat in a mixing bowl.
Add the squeezed bread, egg, grated cheese, and salt.
A sprinkle of pepper if you like, I recommend a sprinkle of garlic powder which complements it well.
Mix the ingredients well with your hands.
Add breadcrumbs to compact the mixture so it doesn’t break during cooking.
Divide into 4 equal parts, flatten, and place a peeled hard-boiled egg on top of each portion of meat.
Encircle the egg with the mixture to close it, forming a large meatball.
Tip: Make sure to seal the meatballs well when closing them; otherwise, they may open during cooking
Meanwhile, in a pot where you’ve browned a clove of garlic in a little oil, pour the sauce, adjust salt and pepper, and bring to a boil.
When the tomato sauce starts to boil, add the meatballs, cover the pot, and let them cook over medium heat for 7-8 minutes.
After this time, taste and adjust salt if necessary, gently turn the meatballs, and continue cooking for another 25-30 minutes, stirring occasionally and checking that the tomato doesn’t dry out too much.
(If needed, add a bit more water sparingly).
Here they are ready and delicious, and with the leftover sauce, you can dress the pasta; what you absolutely can’t miss, however, is bread to make ‘scarpetta’ at the end!
