In this recipe, you will find all the Mediterranean aromas that skillfully blend together.
This vegetarian side dish is very simple to make; you just need to choose the pumpkin, and you’re done.


However, it is a vegetable that surely deserves a few more chances in our diet. Nutritionally, it is a rich source of vitamins, minerals, and powerful antioxidants.

A good source of iron, potassium, calcium, selenium, and magnesium, as well as vitamins A, C, E, K, and a good range of B vitamins, including folic acid.

This winter vegetable is definitely the absolute protagonist of this delicious recipe, but other ingredients also play a co-starring role, offering their best: olives, capers, Parmesan cheese, cherry tomatoes, they all contribute excellently to making this vegetarian side dish a super side dish!


It is perfect to accompany meat or fish main courses, also great to prepare in advance and very versatile because you can have fun modifying it in countless ways.


This dish can be cooked in both the traditional oven or in the air fryer: both methods are described in the recipe.
We can also bring it to the table as a colorful and Mediterranean appetizer.

Ingredients

Mediterranean Baked Pumpkin

  • 1.76 lbs pumpkin
  • 7 cherry tomatoes
  • 12 black olives
  • 2 tbsps breadcrumbs
  • 2 tbsps Parmesan cheese (grated)
  • to taste capers
  • 1 onion (red or white or spring onion)
  • to taste extra virgin olive oil
  • aromatic herbs (sage and rosemary)
  • salt
  • pepper

Steps

Mediterranean Baked Pumpkin

  • Peel the pumpkin and cut it into pieces. For this recipe, I prefer to use violina or butternut varieties.

  • Cut the cherry tomatoes in half and add them to the pumpkin.

    Cut an onion into wedges and add it to the pumpkin and cherry tomatoes.

  • Add a few tablespoons of black olives.

    Add a handful of capers.

    Season with a bit of rosemary, some garlic powder, and a bit of sage.

    Adjust salt and pepper to taste.

  • Add breadcrumbs and grated Parmesan cheese.

    Transfer to a preheated static oven at 375°F for 18-20 minutes, finishing with the grill function at maximum power until golden brown, about 2-3 minutes.




    Baking in the air fryer: cook at 375°F for about 12-15 minutes until you get a uniform golden brown.
    If you’re using an air fryer, you can use small pans lined with paper.
    Cook for about 12-15 minutes until you achieve an even golden brown.
    Halfway through cooking, take out the air fryer basket and turn all the vegetables to the other side.
    If using the air fryer, here’s a tip! Add the Taggiasca olives only at the end and not with the other ingredients.
    More precisely, add the olives in the last 3-4 minutes of cooking, otherwise, they dry out too much.
    Always check both the oven and the air fryer as cooking times may vary.
    Remove from the oven and serve.
