If you are looking for a quick and tasty main course, I suggest the mushroom omelet.

A simple and economical dish prepared in an air fryer but it is also great cooked in a convection oven or in a pan.

I was telling you that it was a recent discovery for me: I had never thought of using mushrooms as a filling for an omelet.

And yet: really good!

The suggestion came from my niece who is crazy about mushrooms: she came to visit us at home and after chatting, it was time for dinner.

So we got busy preparing something: what do you think of an omelet? Idea accepted: then the suggestion.

“Aunt, do you have mushrooms to add?” Said and done: successful experiment and mushroom omelet ready to be enjoyed.

The omelet seemed like a great idea also because I had never tried it and as you know, I am very curious in the kitchen

A very simple recipe to make, in reasonable times and good, ideal for a quick dinner, without sacrificing good taste.

I had fresh champignon mushrooms at home but all types of mushrooms, fresh or frozen, are fine.

As for cooking, I did it in the oven… omelets come out so good and without adding oil that I almost don’t make them in a pan anymore.

To prepare the omelet with the air fryer, it is enough to cook it in a well-oiled pan or lined with parchment paper to place inside the basket.


I used a round one, very convenient if we want to cut it into slices, but oval pans or square and rectangular molds can also be used.

Ingredients

Mushroom Omelet

  • 21 oz champignon mushrooms
  • 1 shallot (or half an onion)
  • 6 eggs
  • to taste chopped parsley
  • 1/2 cup parmesan cheese
  • to taste extra virgin olive oil
  • salt
  • pepper

Tools

  • Air Fryer
  • Parchment Papers
  • Baking Pan

Steps

Mushroom Omelet

  • If they are good, you can also use the cleaned and cut stems.

    Take a wide-bottomed pan and pour a swirl of olive oil.

    Add 1 shallot, 2 cloves of garlic, and a piece of chili pepper.

    Let it sauté on low heat and when the shallot is wilted, add the sliced mushrooms.

    Salt, add chopped parsley, and sauté in the pan for a couple of minutes until wilted.

  • In a bowl, beat the eggs.

    Add salt, pepper, grated cheese, and mix.

    Add the sautéed mushrooms and mix.

  • Pour eggs and mushrooms into a baking pan lined with parchment paper.

    Cooking in an air fryer cook at 375°F for 13 minutes. (Obviously check as each fryer has its own times).

    Cooking in a preheated oven at 350°F for 30 minutes. (Obviously check as each oven has its own times).

    After this time, remove from oven and let it cool.

    Alternatively, you can cook the omelet in a pan, using the classic method.

Tips

We choose the baking pan according to the size of our air fryer basket and ensure it is made of material suitable for this type of cooking.

If you don’t have an air fryer, use a 20 cm diameter pan or baking pan greased with oil, otherwise in the oven at 350°F for about 30 minutes.

This is a vegetarian version. If you want it richer, you can add diced cooked ham and you’ll see how delicious it is.
