  • 2.2 lbs pork loin
  • 1 cup dry white wine
  • as needed vegetable broth
  • 1 shallot
  • sage
  • rosemary
  • garlic
  • salt
  • pepper

Oven-Baked Pork Roast

  • Preheat the oven to 300°F.

    Rub the meat with freshly ground salt and pepper. Tie it tightly with kitchen string. Secure the ends with a sturdy knot and tuck a sprig of sage and rosemary under the string.

  • Then transfer it to a baking dish with some olive oil.

    Place it in the already hot oven at 400°F for 30 minutes, turning the meat after 15 minutes with two spatulas, without piercing it.

    Remove the dish from the oven, add the shallots, garlic, carrot, and celery, cleaned and finely chopped, and drizzle with the wine.

    Lower the oven temperature to 350°F, reposition the dish, and continue cooking for about 1 hour, occasionally basting the meat with the cooking juices.
