Oven-Baked Zucchini Sticks

The Oven-Baked Zucchini Sticks, or in an air fryer, are a light and tasty side dish with few calories.

The gratin zucchini can be prepared in no time without frying. After slicing into matchsticks or chunks, they are baked with extra virgin olive oil and breadcrumbs, super easy!
A vegetarian side dish suitable for everyone, try them they look like fries. For the vegan version, do not add grated cheese.

For the preparation of gratin zucchini, use medium-sized zucchini, from which to obtain sticks of equal size for uniform cooking.

A clever recipe because it can be prepared in advance and served when needed, as it is good both hot and cold. If cut into chunks, they can also become a fun finger food, perfect for an aperitif or buffet.

If there are leftovers, they keep well in the fridge for a day.

Before enjoying them, leave them at room temperature for half an hour.

They can also be enjoyed out of the house, for a work lunch, for example, as a side dish to a second course.

Being a vegetarian recipe, it is very easy to make when you have guests with this requirement, or when you want a light but absolutely delicious side dish.

Ingredients for Oven-Baked Zucchini Sticks

  • 28.2 oz zucchini
  • 1/3 cup breadcrumbs
  • 1/3 cup semolina flour
  • 1/3 cup parmesan
  • to taste garlic powder (optional)
  • to taste dried oregano (as desired)
  • chopped parsley (fresh)
  • to taste extra virgin olive oil
  • salt
  • pepper

Steps for Oven-Baked Zucchini Sticks

  • First, wash and trim the zucchini, then slice them lengthwise about half a centimeter thick. You can use a mandoline to help, then cut the slices in half, then into sticks, to get rectangles about 2-2.5 inches by 0.4 inches, thick 1/2 centimeter.

    (I used a dough scraper for this type of cut. But a knife is also fine; the important thing is to cut the zucchini into sticks).

  • Transfer to a large container, add plenty of extra virgin olive oil, and mix, so the zucchini are completely covered.
    In another container, mix the breadcrumbs, semolina, grated cheese, garlic powder, chopped parsley, and dried oregano.

    Then transfer the prepared mix to the bowl with the zucchini and mix well.

  • Now place the zucchini on a baking tray lined with parchment paper, brushed with a little oil, sprinkle with the remaining mix of seasonings, another drizzle of oil, then season with a pinch of salt.


    Transfer to a static oven at 374°F for 20/25 minutes, then switch to the grill function for a few minutes until completely gratin.

    Take the air fryer basket, place a sheet of parchment paper on the bottom, and arrange the zucchini sticks on top, distributing them well.

    Cook at 356°F for 12/15 minutes, giving the basket a shake halfway through cooking, to ensure even browning of the zucchini.

  • Remove from the oven and let cool for a few minutes before serving.

Advice and Curiosities

To get crispy zucchini, it’s important to choose the vegetables well, which should preferably be tender and small.

In this case, the zucchini are less watery and lend themselves better to this type of recipe. They will become very crispy in just a few minutes.

The same recipe can be made by cutting the zucchini in other ways: you can make them into cubes or even slices, the important thing is to adjust the cooking time because in both cases, being smaller pieces than sticks, it will take a few minutes less.

Check that all the zucchini have been completely breaded.

For a more robust flavor, you can substitute the classic grated cheese with a more intense and flavorful cheese like pecorino.

Additionally, there is the option to make a spicy version by adding chili powder and mixing it with breadcrumbs and grated cheese.

You can store the zucchini sticks for 2-3 days in the refrigerator and reheat them in the oven or microwave as needed.

Do not freeze.
