Ingredients

Pasta with Mushrooms and Cooked Ham

  • 11 oz pasta (Fusilli, penne, rigatoni or other good pasta, also tagliatelle)
  • 2 cups champignon mushrooms
  • 7 oz robiola cheese (or Philadelphia or another creamy cheese)
  • 4 oz cooked ham
  • to taste parsley
  • to taste extra virgin olive oil
  • salt
  • pepper
  • 2 tbsps Parmesan (optional)

Steps

Pasta with Mushrooms and Cooked Ham

  • Start by cleaning the mushrooms.

    Then slice them thinly.

  • Take a pan, add some extra virgin olive oil, two whole peeled garlic cloves.

    Sauté the garlic for a couple of minutes, then add the mushrooms.

    Season with salt and pepper, add some parsley, and cook over medium heat for about ten minutes, until almost all the mushroom’s water has evaporated.

  • At this point, add the ham: you can use either sliced ham cut into strips or diced.
    Let it flavor for a few minutes over high heat.

  • Cook the pasta in plenty of salted water.

    While the pasta is cooking, take a ladle of water from the pot and put it in a bowl.

    Add the robiola and work it with a fork until you form a cream.

    Pour the hot cream into the pan with the heat off.

    Stir.

  • Once the pasta is drained, pour it into the pan with the sauce, turn on the heat, and let it flavor for a few minutes over high heat.

    But just for a moment.

    A sprinkle of fresh parsley and it can be plated.

    Distribute onto plates and serve immediately.
