Pasta with Zucchini and Tuna

Pasta with zucchini and tuna is a quick and tasty first course perfect for a complete and nutritious lunch.

Choose nice small and flavorful zucchinis and good canned tuna. We can plate our pasta with zucchini and tuna as it is or serve it with a sprinkle of chopped parsley, as we did.

The dish is simple and economical, but if we want to add a scenic touch, we can use a parsley leaf or finely chopped chives.

If we don’t want to add other flavors, just nicely arrange some zucchini slices on top of the pasta.

Ingredients

Pasta with Zucchini and Tuna

  • 11 oz pasta (short or long)
  • 3 zucchini (medium)
  • Half onion
  • 7 oz tuna in oil
  • to taste parsley
  • basil (to taste)
  • to taste white wine (for deglazing)
  • to taste extra virgin olive oil
  • salt

Steps

Pasta with Zucchini and Tuna

  • Cook the pasta in a pot with boiling salted water.

  • Meanwhile, heat a drizzle of oil in a pan and sauté the chopped onion.

    Slice the zucchinis into rounds using a mandoline so they all have a similar thickness.

  • Add the zucchinis to the pan, season with salt, and cook for about 10 minutes.

    (They should cook but remain crunchy).

    Deglaze with white wine, then add the well-drained tuna, mix and let it flavor.

  • Drain the pasta al dente and toss it in the pan, giving a few stirs to distribute the sauce evenly.

    Add chopped parsley to taste.

  • Place it in a nice serving dish and serve this exquisite pasta with tuna and zucchini at the table.

Tips

If we want our pasta to become a more substantial and even tastier dish, we can add other ingredients. Some ideas?

Add pitted black olives during cooking with the zucchinis and let them wilt slightly.

Alternatively, prepare pasta with zucchini, tuna, and cherry tomatoes, a colorful and flavorful variant.

In this case, we recommend adding quartered cherry tomatoes at the end of cooking.

Also excellent with the addition of ricotta diluted with a little pasta cooking water.
