Oh, I forgot… with the tomato sauce from the stewed ribs, you can also dress pasta or polenta!
Pork ribs can be cooked in various ways. The most widespread method worldwide is roasted, meaning: on the grill, on a gas or electric grill, and in the oven.
Move the pot to the smallest gas burner, cover it with a lid, and simmer for 45 minutes, stirring occasionally.
If you use quick-cooking corn flour, which yields good results in very little time.

Ingredients for Polenta and Pork Ribs
- 4 cups coarse cornmeal
- 7.5 cups water
- to taste coarse salt
- 2 tablespoons extra-virgin olive oil
- 2.2 lbs pork ribs
- carrot (1)
- Half stalk celery
- 1 onion (small)
- Half glass dry white wine
- 25 oz tomato puree
- to taste extra-virgin olive oil
- salt
- pepper

Steps for Polenta and Pork Ribs
Take the pork ribs and, if you bought them in one piece for a better price, cut them into ribs using a sharp knife.
Clean the celery, carrot, and onion well, and chop them.
Place the ribs in a pan and cover them with the chopped vegetables.
Brown the pork ribs well.
Wait a minute for the ribs to reheat, deglaze with half a glass of dry white wine and let it evaporate.
Adjust with salt and pepper, add the tomato sauce. Clean the bottle with a little water and add to the sauce.
Cover the pan with a lid and simmer for 45/50 minutes, until the sauce is reduced.
Meanwhile, let’s prepare the polenta.
Take a double-bottomed pot, pour in the water, and add the salt.
Add the cornmeal and mix very well with a whisk.
Then turn on the stove and continue to stir until it starts to boil, at this point add a drizzle of oil and continue to stir for a few minutes.
When you see the mixture becoming smooth and homogeneous.
Move the pot to the smallest gas burner, cover it with a lid, and simmer for 45 minutes, without stirring.
(While if you use quick-cooking cornmeal, which gives good results in very little time. These have a cooking time of 4 or 5 minutes).
