This recipe was born as a leftover dish. Yesterday I had leftover sausages and friarielli and opted to create a different dish, I thought and thought and came up with this potato, sausage, and friarielli pie… in the end very, very appreciated by my husband and my neighbors!

Ingredients
Potato Pie with Sausage and Friarielli
- 2 bunches friarielli (weight when cleaned and cooked 400 grams)
- potatoes (weight when peeled and cooked approximately 700 grams)
- 3 eggs
- 3 sausages
- 5.3 oz provola (sliced or mozzarella or Galbanino etc.)
- 1.8 oz parmesan
- 0.7 oz butter
- to taste extra virgin olive oil
- to taste breadcrumbs
- 1 clove garlic
- salt
- pepper

Steps
Potato Pie with Sausage and Friarielli
First, scrub the potatoes thoroughly, removing all possible impurities: dirt, sprouts, soft parts, etc.
Then boil them in a pot with plenty of water for about 30 minutes.
(Cooking times may vary depending on the size of the potatoes).
To check the cooking, insert a toothpick into a potato, if it easily reaches the center, it is cooked.
Remove the skin and mash with a potato masher, let cool.
Meanwhile, start cleaning the friarielli:
Remove the yellowed and damaged leaves, cut the stem of the broccoli tops, cutting the harder and thicker part almost where the leaves begin.
Clean the friarielli well and wash them about 3 times.
In a large pan, sauté two cloves of garlic with extra virgin olive oil, when the garlic starts to color, remove it from the oil and add the friarielli.
Let cook for about 5 minutes, once cooked, let cool and chop with a knife.
In a separate pan, crumble the sausages and brown them with a little oil until crispy.
In a bowl where we have the mashed potatoes, add the sausages cut into small pieces, the chopped friarielli, the sliced provola, the grated cheese, and finally the eggs.
(Set aside 2/3 tablespoons of crumbled sausage and 4/5 slices of provola).
Adjust salt and pepper and mix.
Transfer half of the mixture into a greased rectangular baking pan and dusted with breadcrumbs.
Spread the reserved sausage in the center.
Now lay the slices of provola and cover the entire surface with the remaining mixture.
Once the pan is filled, a second dusting of breadcrumbs with the addition of some butter flakes before baking in the oven.
Turn on the oven at 375°F. Fan-assisted or static mode.
Bake at 375°F for 30 minutes or until golden.Air fryer cooking. Place the pan suitable for the air fryer, and cook at 375°F for 20 minutes. Once cooked, leave the pie in the air fryer to rest for 1/2 minutes before removing it and serving.
I want to remind you that times may vary from oven to oven, the same for the air fryer, so always check.
Great to eat hot or warm, but also delicious cold the next day.

Tips
If you prefer, you can first quickly blanch the friarielli in boiling water for about 2 minutes, and then sauté them in a pan with garlic, oil, and chili: they will remain soft and chewy and will be a little less bitter.
Cooking in the air fryer… Insert the pan in the air fryer, and cook at 400°F for 20 minutes. Once cooked, leave the potato and sausage pie with friarielli in the air fryer to rest for 1/2 minutes before removing it and serving.
