Ingredients

  • 2 yellow peppers
  • 1.3 lbs potatoes
  • 2 red peppers
  • as needed extra virgin olive oil
  • salt
  • pepper

Tools

  • Pan

Steps

  • First, wash the peppers and potatoes.

    Peel the potatoes.

  • Cut them into wedges.

    Of the same size for even cooking.

  • Clean the peppers by removing the central part and all seeds, then cut them into strips about 2 inches long.

  • In a pan, start by cooking the potatoes with a splash of extra virgin olive oil.

    After about 10 minutes of cooking, add the peppers and cook for another 10 minutes.

    Check that the potatoes are soft; if they are not ready, continue cooking for a few more minutes.

    Salt and serve this delicious side dish of potatoes and peppers!

Tips

You can also bake them at 350°F for about 25/30 minutes. Times may vary depending on the size of the potatoes and peppers.

Pour everything into the basket of your air fryer and drizzle with a bit of oil. Stir. Cook at 390°F for 20/25 minutes, shaking them halfway through cooking.

Potatoes and peppers should be consumed immediately, hot or at room temperature.

You can still store them in the fridge for 24 hours in a tightly closed airtight container.
