Roman-style Gnocchi with Artichokes

Roman-style gnocchi with artichokes and cooked ham. They are a truly delicious first course, super simple and super tasty, perfect for any occasion, especially if you have guests and want to leave them speechless.

They are a versatile dish ideal for a family lunch and also appreciated by the little ones.

The ones I made are seasoned with artichokes and ham, I prepared them for a family lunch, and they were a success!

The recipe for the Gnocchi is really very simple, perfect for those who do not have much time and maybe not much experience in the kitchen, you will only need a few simple ingredients to make this fantastic dish.


Moreover, it will be really easy to make, just follow me throughout the preparation, and you will see that everything will be really easy, and in the end, you will be able to get a really tasty and inviting dish.
The beauty of this dish is that it can be prepared in advance and kept in the refrigerator.


The gnocchi are a simple recipe; they are semolina discs, made with semolina, milk, butter, eggs, and cheese, which are baked in the oven to get that characteristic crust on the surface that makes them truly irresistible. 

If you want to make these gnocchi even more appealing to children’s eyes, try them in shapes that can most attract their attention, like stars, hearts.

Ingredients

Roman-style Gnocchi with Artichokes

  • 4 1/4 cups milk
  • 1 1/4 cups semolina
  • 2 tbsps butter
  • 3 oz Parmesan
  • 2 egg yolks
  • to taste salt
  • to taste nutmeg
  • 3 artichokes (frozen ones are also fine)
  • 5 slices cooked ham
  • to taste grated Parmesan
  • 2 tbsps butter
  • 1 clove garlic
  • to taste extra virgin olive oil

Steps

Roman-style Gnocchi with Artichokes

  • Put the milk in a large pot and heat it with salt, pepper, and nutmeg.

    At the first boil, add the semolina in a rain and stir continuously to avoid lumps with a whisk for a few minutes until it has thickened.

  • Remove from heat, transfer the mixture into a bowl, add the butter, and mix until you get a homogeneous mixture.
    Add the egg yolks, grated Parmesan, and mix to blend very well.

  • Pour the obtained dough onto a sheet of parchment paper, shape a cylinder about 2-2.5 inches in diameter, wrap it in the paper and let it cool in the refrigerator for at least 1 hour.

  • Meanwhile, let’s prepare the seasoning.

    Clean the artichokes by removing the harder outer leaves, cut them into small pieces, and put them in water and lemon to prevent them from darkening.

    In a pan, brown a garlic clove, add the artichokes, salt, pepper, and cook them with a lid until they become soft.

  • (If you can’t find fresh artichokes, use frozen ones).

  • After the cooling time, take back the cylinder and slice it into slices 0.4 inches thick.

  • At this point, take a nice large baking dish and put some butter flakes on the bottom.

    Start forming the layers starting with the gnocchi, cooked ham, grated cheese, and artichokes.

    And so on until all the gnocchi are finished.

    (You can substitute the cooked ham with speck or bacon).

  • Finish with plenty of Parmesan, pepper, and nutmeg and a few scattered butter flakes.

  • Baking in the oven. Bake in a preheated ventilated oven at 356°F for 20 minutes, to make them more golden you can raise the oven temperature a bit in the last few minutes and switch to the grill mode.

    Cooking in the air fryer. Insert the tray in the air fryer and cook at 356°F for 12/15 minutes or until the surface of the gnocchi is golden brown

    (Obviously, check every electric oven and fryer their times).

  • Your Roman-style gnocchi are ready, serve them hot.

Tips

You can prepare the base of the Roman-style gnocchi even the day before; you can also assemble the tray and freeze it, then bake it directly frozen.
