Ingredients for the Sausage and Broccoli Rabe Gateau
- 2 bunches broccoli rabe (weight after cleaning and cooking 14 oz)
- 2.6 lbs potatoes (weight after cleaning about 1.9 lbs)
- 3 eggs
- 3 sausages
- 5.3 oz smoked provola cheese (sliced or mozzarella or galbanino etc.)
- 2.1 oz Parmigiano Reggiano DOP
- 0.9 oz butter
- as needed breadcrumbs
- extra virgin olive oil
- garlic
- salt
- pepper

Steps for the Sausage and Broccoli Rabe Gateau
First, thoroughly scrub the potatoes, removing any impurities: dirt, sprouts, soft parts, etc.
Then boil them in a pot with plenty of water for about 30 minutes.
(Cooking times may vary depending on the size of the potatoes).
To check if they are cooked, insert a toothpick into a potato; if it easily reaches the center, it means it’s cooked.
Remove the skin and mash with a potato masher, let cool.
Meanwhile, start cleaning the broccoli rabe:
Remove the yellowed and damaged leaves, cut the stem of the broccoli bundles, cutting the harder and thicker part almost to where the leaves begin.
Clean the broccoli rabe well and wash them about 3 times.
In a large pan, sauté two cloves of garlic with extra virgin olive oil; when the garlic begins to color, remove it from the oil and add the broccoli rabe.
Cook for about 5 minutes, once cooked, let cool and chop with a knife.
In a separate pan, crumble the sausages and brown them with a little oil until they are crispy.
In a bowl where we have the mashed potatoes, add the sausages cut into small pieces, the chopped broccoli rabe, the sliced provola, the grated cheese, and finally the eggs.
(Keep aside 2/3 tablespoons of crumbled sausage and 4/5 slices of provola).
Adjust salt and pepper and mix.
Transfer half of the mixture into a buttered pan and dusted with breadcrumbs.
Pan size 9-10 inches.
Layer the reserved sausage in the center.
Now place the slices of provola and cover the entire surface with the remaining mixture.
Once the pan is filled, add a second dusting of breadcrumbs with a few knobs of butter before baking.
Preheat the oven to 375°F. Fan-assisted mode.
Bake at 375°F for 30 minutes or until golden brown.
Air fryer cooking
Use a silicone, disposable aluminum, or ceramic/pyrex container that fits the dimensions of the basket of your air fryer.
To ensure even and quick cooking, the height of the Gateau in the mold should not exceed 2-3 cm. If you want a taller Gateau, you will need to extend the cooking time and slightly reduce the temperature.
Generously sprinkle the surface with breadcrumbs and add a drizzle of extra virgin olive oil (or a few knobs of butter) for a perfect browning.
For a low Gateau (2 cm) it takes 15 minutes. For a higher one (3-4 cm) it will take 20-25 minutes.
A final tip: if you make it in individual servings (maybe using muffin tins or small aluminum molds), cooking will be even faster! About 10 minutes at 400°F.

Tips
If you prefer, you can first blanch the broccoli rabe with a quick boil, about 2 minutes, and then sauté them in a pan with garlic, oil, and chili: they will remain soft and chewy and will be slightly less bitter.
Air fryer cooking…… Place the pan in the air fryer and cook at 400°F for 20 minutes. Once cooked, let the gateau rest in the air fryer for a few minutes before removing and serving.
