  • 16 oz sausage (preferably thin)
  • 5 potatoes
  • 7 oz cherry tomatoes (such as date or cherry tomatoes)
  • 1 onion (optional, white or Tropea)
  • as needed black olives (optional, but recommended for the "Mediterranean" flavor)
  • 1 sprig rosemary
  • salt
  • pepper
  • as needed extra virgin olive oil

Steps

Sausage with Mediterranean Potatoes, a Timeless Classic

  • Peel and cut the potatoes into rough chunks.


    Cut the onion into rings or wedges.


    Wash and halve the cherry tomatoes.


    Cut the sausage into pieces about 1.5-2 inches.

  • Place the potatoes and onions in a baking tray lined with parchment paper.


    Season with a drizzle of oil, salt, pepper, and rosemary needles. Mix well.


    Oven Cooking

    Bake in a preheated static or fan-assisted oven at 392°F for about 20-25 minutes, or until the potatoes start to brown.

  • Take the tray out of the oven.
    Add the sausage pieces, cut cherry tomatoes, and black olives.

    Mix gently to combine everything.

    Return the tray to the oven and continue cooking at 392°F for another 20-25 minutes.

    During this time, stir occasionally to ensure even cooking.

  • Once the sausage is well cooked and the potatoes are soft and golden, remove everything from the oven.
    Garnish with fresh chopped parsley, if you like.
    Serve the dish hot.

  • Cooking in Air Fryer.
    Preheat the air fryer to 392°F. Distribute the potatoes in the basket in a single layer, avoiding too much overlap. Cook for about 15-20 minutes. Halfway through, shake the basket to turn them and ensure even browning.
    After the first 15-20 minutes, open the basket, add the sausage pieces, cherry tomatoes, and black olives. Mix all the ingredients and put the basket back in the fryer.
    Complete the cooking at 356°F for another 8-10 minutes, or until the sausage is well cooked and golden. If necessary, stir again halfway through.

Advice

For a more intense flavor, you can deglaze with half a glass of white wine after adding the sausage.

If you prefer crispier potatoes, you can cook them separately from the sausage.

Some variations of the recipe include adding oregano, sliced peppers, or mushrooms.

Cooking times in the air fryer are much faster than in a traditional oven and generally depend on two main factors: temperature and time.
