- 2 puff pastry rolls (round)
- 4.23 oz bresaola
- 3.53 oz cream cheese
- to taste arugula
- to taste parmesan (shaved)
- 1 egg yolk
- 1 tablespoon milk
- to taste poppy seeds (or sesame seeds)

Savory Croissants with Bresaola and Arugula
Roll out the first puff pastry roll and place the second on top so that the pastry disks are in contact.
Cut the two stacked disks into 12 wedges.
Roll the triangles obtained, starting from the base and proceeding towards the tip.
Bend the roll slightly to curve it and give it the shape of a croissant, and repeat for all triangles.
Place the croissants on a baking tray lined with parchment paper, keeping them slightly apart, then brush the surface with the egg yolk beaten with a tablespoon of milk.
Decorate with a sprinkle of poppy seeds
(You can use any seeds you prefer or skip them)
Bake in a preheated ventilated oven at 374°F for 15 minutes and remove them from the oven.
Once removed and slightly cooled, cut them in half and spread the cheese on the bottom half.
Fill each croissant with bresaola, then complete with arugula and parmesan shavings, and close them with the other half.

Tips
This dish can be stored in the refrigerator for about 1 day from preparation, but it’s advisable to freeze the empty cooked croissants if you don’t intend to use them on the same day. Just thaw them at room temperature for a few hours before filling or reheating them in the oven.
